Slow Cooker Waipawa Butchery Chilli

 Ingredients:

  • 500g beef mince
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 1 capsicum (bell pepper), chopped
  • 1 can kidney beans, drained
  • 1 can chopped tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef stock
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chilli powder (adjust to taste)
  • 1 tsp oregano
  • Salt & pepper
  • Optional: 1 tsp sugar or a small piece of dark chocolate (for depth)


Method:

  1. Brown the mince:
    Cook the beef mince in a pan until browned. Add onion and garlic, cook for a couple of minutes.
  2. Into the slow cooker:
    Transfer everything to the slow cooker. Add capsicum, beans, tomatoes, tomato paste, stock, and all spices.
  3. Cook low & slow:
    • Low: 6–8 hours
    • High: 3–4 hours
  4. Final touch:
    Taste and adjust seasoning. Add a little sugar or dark chocolate if you want a richer flavour.


Serve with:
Rice, tortilla chips, or in a bowl with sour cream, cheese, and fresh coriander.
