Slow Cooker Waipawa Butchery Chilli
Ingredients:
- 500g beef mince
- 1 onion, diced
- 2 cloves garlic, crushed
- 1 capsicum (bell pepper), chopped
- 1 can kidney beans, drained
- 1 can chopped tomatoes
- 2 tbsp tomato paste
- 1 cup beef stock
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chilli powder (adjust to taste)
- 1 tsp oregano
- Salt & pepper
- Optional: 1 tsp sugar or a small piece of dark chocolate (for depth)
Method:
- Brown the mince:
Cook the beef mince in a pan until browned. Add onion and garlic, cook for a couple of minutes. - Into the slow cooker:
Transfer everything to the slow cooker. Add capsicum, beans, tomatoes, tomato paste, stock, and all spices. - Cook low & slow:
- Low: 6–8 hours
- High: 3–4 hours
- Final touch:
Taste and adjust seasoning. Add a little sugar or dark chocolate if you want a richer flavour.
Serve with:
Rice, tortilla chips, or in a bowl with sour cream, cheese, and fresh coriander.
