Hot or cold, Silverside is a tasty classic family favourite.
Just like Mum used to make, something about delicious homemade corned beef conjures up warm memories of your childhood. Our Patangata Station Angus Corned Silverside is easy to prepare and equally tasty, hot and cold.
Just place in a pot on a stovetop, add ⅓ cup of malt or balsamic vinegar, 1 onion (roughly cut), 1.5 tablespoons of brown sugar, a bay leaf or two and some whole black peppercorns into a large pot / saucepan and cover with cold water so the beef is completely submerged. Bring to a boil, reduce immediately to a simmer and partially cover, simmering for two hours or until you can pierce with a fork to the centre. You can also cook in a slow cooker (about 7 hours on low, four on high). Serve hot with a mustard sauce, and slice up the leftovers for the best-tasting sandwich filling, including the classic Rueben sandwich.
